About Big Head Burger
Based in Waterloo, Iowa, Big Head Burger is a successful smash burger concept that quite literally came to founder David Bryant in a dream. Bryant, who worked for John Deere for seven years, was home recuperating from surgery in 2016 when he dreamt of a burger joint — complete with menu, imagery, and name. When he awoke, he wheeled into the next room and began recording every detail.
In 2019, Bryant bought a food truck with his mother, Nina. The griddled smash burgers quickly developed a devoted following, leading Bryant to open a brick-and-mortar location at 324 W. 4th St. in 2021.
Grounded by The Classic—a smashed beef burger with proprietary Big Head Sauce, lettuce, pickle, and onion on a toasted potato bun—the menu also features chicken and vegan sandwich options, along with Big Head Fries (smothered with beef, cheese, lettuce, tomato, onion, and Big Head Sauce). Guests can pair their meals with house-made craft lemonade or indulgent milkshakes in flavors like Red Velvet and Poundcake.
