A fresh take on dining

Verve Kombucha Kitchen + Bar offers a fresh take on dining that’s good for the body and soul—and good for the community, too. Using natural, locally sourced ingredients, Verve puts a uniquely modern (and uniquely Iowan) spin on Kombucha, a fermented tea drink whose origins date back hundreds of years.

Verve brews their own all-natural kombucha on-site and serve a full menu in the taproom. Owners Andy and Alexander dreamt about bringing this concept to Waterloo and growing their distribution to grocery stores, restaurants and breweries across Iowa.

Securing and refurbishing a vacant building in downtown Waterloo was the first step to making this dream a reality. The pair got to work designing and building out the restaurant, which includes repurposed bowling alley tables and eclectic hanging lights. At the same time, they were testing recipes and perfecting their menu of new American cuisine delivered on shared plates. The bar is a prominent feature in the building and includes flights of kombucha, signature kombucha cocktails and local craft beers.
